Gluten Free Corn Bread

Ingredients:

  • 1 1/4 cup yellow corn meal
  • 3/4 cup white rice flour
  • 1/4 cup sugar
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 egg

Directions

  1. Combine all dry ingredients in a medium bowl and stir until well mixed.
  2. Stir milk, oil and egg into dry ingredients and mix just until moistened.
  3. Grease either a 8" or 9" square baking pan and pour batter into pan.
  4. Bake in preheated oven at 400 degrees for 20-25 minutes.
