Chicken Enchiladas

Ingredients:
  • 2 chicken breasts - cooked and cut into bite size pieces
  • 1 can cream of chicken soup
  • 1/2 an onion - finely chopped
  • 1 small can diced green chiles
  • 8 oz. sour cream - extra for topping
  • 1 8 oz. bag cheese (colby jack or mexican style
Directions:
  • Preheat oven to 350 degrees
  • In a mixing bowl, mix together soup, onion, chiles, sour cream, and 1/2 the bag of cheese.
  • Spread mix on tortilla.
  • Place chicken on top of mix and roll. Place in 9x13 oven safe pan. Makes 6 - 8 depending on tortilla size.
  • Spread left over mix and 1/2 bag of cheese on top.
  • Bake for 30 - 40 min, until cheese is slightly browned on top.
