Chicken Enchiladas
Ingredients:
- 2 chicken breasts - cooked and cut into bite size pieces
- 1 can cream of chicken soup
- 1/2 an onion - finely chopped
- 1 small can diced green chiles
- 8 oz. sour cream - extra for topping
- 1 8 oz. bag cheese (colby jack or mexican style
- Preheat oven to 350 degrees
- In a mixing bowl, mix together soup, onion, chiles, sour cream, and 1/2 the bag of cheese.
- Spread mix on tortilla.
- Place chicken on top of mix and roll. Place in 9x13 oven safe pan. Makes 6 - 8 depending on tortilla size.
- Spread left over mix and 1/2 bag of cheese on top.
- Bake for 30 - 40 min, until cheese is slightly browned on top.
