Balsamic Citrus Asparagus

Ingredients

1 bunch of Asparagus

2 Cups of mushrooms (any variety - we used oyster and shitake)

1/2 Cup Balsamic Vinegar

3 Tablespoons Dijon Mustard

3 Tablespoons Honey

Juice of 1/2 a Medium Orange

3 Tablespoons Olive Oil

Butter

Parmesan Cheese shavings for garnish

Preparation

Clean and snap asparagus; set aside. Clean and cut mushrooms; set aside. Mix balsamic, oil, honey, mustard, and orange juice. Place asparagus in quart baggie with marinade and seal; set aside for 1 hour. (Can be marinated for longer and eaten as a cold side)

Sauté mushrooms in 2 tablespoons of butter. Grill asparagus until light brown color appears (asparagus could also be roasted in oven). Mix with mushrooms and garnish with shredded parmesan cheese.
